Have you ever had Zucchini Bread? If not – STOP EVERYTHING – Print out this recipe and make it

Zucchini Bread is pretty much the BEST stuff around – there is 1 Zucchini in EACH loaf — so it is “healthy” ( okay okay okay maybe it is not super good for you but let’s just live in the delusion it is 🙂 )

I did make it a “bit” healthier by using whole wheat flour. You can make this recipe gluten – free by using gluten – free flour

As you will see almost everything you need in already in your pantry

This is the perfect recipe to have kids to help make — quick tip – If you have left over batter simply fill up some muffin tips and bake

Freeze the muffins and have them on hand for a quick breakfast or snack – I usually leave one out overnight to defrost 🙂

Another trick to shred the zucchini is using a cheese grater – I use one of the largest hole size — seriously it took about 4 minutes

If you make this recipe I would love to know what you think 🙂

This recipe is from my family to yours 🙂

Love you all!

This will make 2 Small Loafs

Ingredients

  • 3 Cups of Flour ( White, Wheat, or Gluten - Free)
  • 1 Teaspoon of Baking Powder
  • 1 Teaspoon of Salt
  • 1 teaspoon of Baking Soda
  • 1 Tablespoon of Vanilla
  • 4 Eggs
  • 1¼ Cup of Vegetable Oil
  • 2 cups of White Sugar
  • 2 Zucchini - Grated
  • 1 Cup of Walnuts - Chopped

Instructions

  1. Preheat oven to 325
  2. Grease 2 loaf pans - 8x4 works great ( I used a slightly larger in my recipe)
  3. Using a sifter - sift flour, salt, baking powder, baking soda, and cinnamon into a bowl ---- sifting makes the bread lighter 🙂
  4. In another bowl mix - oil, vanilla, eggs, and sugar
  5. Slowly add the flour mixture into the egg mixture --- once it is mixed add zucchini and walnuts
  6. Pour Batter into the loaf pans and bake for 1 hour
  7. Let it sit for 1 hour before taking out of the pan
  8. Enjoy!

Hi, Can’t wait to try this recipe. Can you list how much zucchini to use in cups please? Where I am, zucchini comes in various sizes and its hard to judge how much to use. Thanks!

  • Pam

I made this last night, it is amazing! I didn’t know how much cinnamon to use so I just sprinkled some in, and I used sunflower seeds and chia seeds instead of nuts – a generous handful of each. I used two medium-sized zucchini (about 9 inches long), grated with the large side of the cheese grater. The bread is moist and sweet with a crunchy crust. I made one large loaf and six muffins. Perfect; thanks for this great recipe!

  • cindy

Best zucchini made yesterday and it’s gone will have to make more.

  • Krystle

Has anyone tried this as muffins instead of bread?

  • Tammy

Used to have a recipe long ago similar to this one. Made this today just following the ingredients, having made a similar recipe, added everything and noticed no cinnamon in the ingredients… I just put in a couple of teaspoons, just guessing. How much was supposed to go in?? Next time, I’ll probably bump it up to a tablespoon. After referring back, it was referred to in the directions.

  • Amanda

    how much cinnamon?!

  • Kelly Erickson

This looks great, and I’m trying it right now. But I’m wondering how much cinnamon? It says to sift it with the flour, but isn’t in the ingredient list.

FAQs

Do you leave the skin on zucchini when making bread? ›

Don't peel the zucchini – Yes, it's tempting to remove the zucchini's skin, but there is no need to do that. Zucchini melts into the bread, so peeling is just an unnecessary step. Do grate the zucchini – I don't know about you, but when it comes to zucchini in bread, I want it there – but I don't want to see it.

Do you squeeze out the liquid from zucchini for bread? ›

Squeezing is optional.

Some recipes tell you to remove extra moisture from the grated zucchini by squeezing it in a clean kitchen towel. But unless your zucchini is excessively juicy, squeezing the squash could be removing some of the moisture you really do want in the bread. It's up to you, though.

What causes my zucchini bread to fall in the middle? ›

As the bread or cake cooks, those air bubbles make it rise, but because they are unstable, the bread or cake then collapses as it sits. Try mixing with a gentler touch: use medium, not high, speed on the electric mixer. Add eggs one at a time, mixing slowly in between each addition.

What causes zucchini bread not to rise? ›

First of all, one of the most common reasons quick breads (and layer cakes as well) sink is that the pan is overfilled. If the batter reaches the top of the pan and still needs to rise, it will collapse. This heavy batter simply needs structure (aka pan sides) so it can keep climbing.

How many zucchinis to make 2 cups? ›

You need 2 cups of grated zucchini for the recipe, so you will need about 3 small zucchini, 2 medium zucchini, or 1 large zucchini.

How many zucchinis are 2 cups grated? ›

A medium zucchini will result in approximately 1 cup of shredded zucchini. If you happen to be using a larger zucchini and the seeds are large, cut the zucchini lengthwise and use a spoon to scoop out the seeds.

How many zucchinis for 1 cup shredded? ›

A medium size zucchini about 6-7 inches long and about 2-3 inches in diameter will be about 1 cup of shredded zucchini.

Does zucchini lower blood pressure? ›

Zucchini contains the water-soluble fiber pectin. Pectin may lower bad cholesterol and lipid levels in a person's blood, promoting good heart health. Furthermore, zucchini is also high in potassium, which can help manage high blood pressure.

Should zucchini be peeled before shredding for bread? ›

Do you peel a zucchini before grating? Zucchini skin is thin and edible, so there's no need to peel it before grating. That said, the peels will retain their green color, even after they're cooked.

What happens if you put too much baking soda in zucchini bread? ›

Using too much baking soda or baking powder can really mess up a recipe, causing it to rise uncontrollably and taste terrible.

Why does my zucchini bread taste weird? ›

When they are larger, zucchinis tend to contain more water, which leads to excess moisture in the batter. Additionally, larger zucchinis don't taste as good, with a more bitter flavor. They can also have larger seeds. These large seeds can throw off the texture of your zucchini bread.

Can you put undercooked zucchini bread back in the oven? ›

It is pretty simple to salvage an undercooked bread and create a decent loaf. Heat the oven to 350 F, return the bread to the oven, and bake for another 10 to 20 minutes. This will work even if the loaf has cooled, which is similar to par-baking bread.

How to tell if zucchini bread is bad? ›

To determine if your zucchini bread has gone bad, check for any unusual odors or moldy spots, typically green or black in color. The texture can also be a giveaway; if it's overly moist or gummy, it's typically a sign that it's past its best.

How do you drain zucchini for bread? ›

I simply squeeze the water out of the zucchini over the sink before using in this recipe. Sometimes, I squeeze the zucchini twice to make sure the excess water is removed. Some zucchini are very wet when grated and others relatively dry; squeezing out the excess water helps to regulate ingredients in the recipe.

How do you cut zucchini for bread? ›

How to Cut a Zucchini
  1. Wash your zucchini really well.
  2. Cut off both ends.
  3. Slice the zucchini in half if it is really large.
  4. Then slice each half again vertically.
  5. Scoop out the seeds with a spoon and place in a bowl.
  6. Then shred the pieces with a cheese grater or a food processor.

Why is my breading not sticking to my zucchini? ›

Refrigerate the breaded zucchini for at least 15 minutes and up to 3 hours—it's just enough time to help the breading stick. Use a neutral oil for frying: Vegetable, canola, or grapeseed oil are great for frying, but my hands-down favorite is olive oil—it's always handy and I like the taste.

Why is my zucchini bread mushy? ›

It's likely that too much liquid was added to the batter. I've tested dozens of zucchini bread recipes and, depending on the other ingredients involved, it's sometimes necessary to squeeze the excess liquid from the shredded zucchini.
