After finding all 1000 Koroks, Hestu will give you the final reward called Hestu's Gift. This key item does not serve any actual gameplay purpose other than as a collector's item, so you really only need it if you are set to 100% complete the game.

Aside from the key item, you can also ask Hestu to dance anytime as another reward.

View Hestu's Dances

Hestu's usual and classic dance for weapon stash upgrades.

Once you collect all 1000 Korok Seeds, you can boogie along with Hestu and dance with him if you talk to him again!

You can choose between his usual dance moves, which are the ones you can see in Tears of the Kingdom when expanding your inventory, or classic dance moves, which are the ones he performs in Breath of the Wild!
