Vendakkai poriyal
We make this poriyal at least once in a week either with sambar or any spicy gravy. The vegetable themselves have lots of nutrients in it, which seriously helps to improve your memory power. So it is great for kids. Some mothers even give their kids raw lady finger, I have no idea how they will eat it, but they do have it raw(I have seen that in real). If your kids are such a raw vegetable eater, you can give them happily or else please give them like this, they will definitely love it.
How to Remove Sliminess from Ladies Finger
I love lady finger, but some people avoid due to its slimy nature. I was in the same category until I heard this from my Big Aunt. She told me to add curd in lady finger..It may sound weird to you, but believe me it really really works. I was totally surprised at my first try..The sliminess is GONE and now I can happily eat lady fingers(talking about the veggie, not yours,LOL).

Ingredients for Ladies Finger Poriyal
- Lady Finger / Vendaikai - 15 cut into thin rounds
- Chilli powder / Milagai podi - 1 tsp
- Mustard Seeds / Kaduku - 1 tsp
- Curd / Thick Yogurt - 2 tblspn
- Oil - 3 tblspn
- Salt to taste

How to Make Ladies Finger Poriyal
- Heat oil in a kadai. Add in mustard seeds and allow them to pop.
- Now add in the lady finger and saute them in the oil for 2 mins.
- Add in curd and mix well. Fry this on high heat till the curd evaporates and the lady finger gets nicely browned. Adding curd makes the sliminess out of the lady finger and makes it crispier.
- Now add in salt and chilli powder and mix well.
- You can cook this as per your liking. If you want it to be crispier, cook it for longer.
- Switch off the heat and serve with rice and any gravy.

- Ladies Finger - 500 grams
- Oil - 4 tblsp
- Mustard seeds - 1 tsp
- Garlic - 4 chopped finely
- Dry Red Chillies - 2
- Onion - 1 chopped finely
- Salt to taste
- Black Pepper - 1 tsp
Instructions
Heat oil in a pan, add mustard, dry red chilli and garlic. Saute for a min.
Add in onions and saute for a min.
Add in ladies finger and mix well.
Stir for 8 to 10 mins till slimy goes away.
Cook till brown.
Add in salt and pepper and mix well.
Serve

Great tip Aarthi, and you know we had just finished having lunch - sorakkai paruppu, rice, vadavams and ... vendakkai poriyal! Coincidence right? And I was making my daughter eat the vendakkai poriyal saying its good for brains and I showed her this post to reinforce my opinion. Ha Ha. I will try the curds next time.

oh its good idea... but i hate curd... i used to cut this veg. and spread it in baking tray and keep it in oven for 6-7 minutes, to remove sliminess.. then usual tempering.. its really tasteful... try this next time...

Hi Aarthi,
I usually dry roast the ladies fingers in a kadai for a few minutes, and then in a different vessel splutter the mustard seeds and oil and add the roasted ladies finger to that, this takes away the stickiness. But I will definetely try it with curd - my kids love curd.Reply

There is another way 2 take away the slime...I used 2 fry the okra on a hot pan without adding oil....keep on frying till the glue fades away....
