Lush mocktails & zero proof drinks
When the occasion calls for alcohol-free, make delicious mocktails. Here are some of my favourite mindful drinking recipes.I’ll show you how to take crafting alcohol-free to new social heights.
Simple syrup with deliciously complex flavours
Simple mocktail syrup with a deliciously complex flavour is easy to make. The trick is using equal parts sugar and water as your base. After which, you can add your favourite ingredients to infuse flavour and finesse your drinks.
Ingredients
- 1 cup sugar
- 1 cup water
Method
- Add sugar and water to a saucepan
- Put on low heat and stir until sugar dissolves
- Simmer for about 5 minutes
- Cool before using
Syrup variations to try at home
- Lavender syrup – add 1 tablespoon of lavender
- Basil syrup – add 1 Cup of basil
- Rosemary syrup – add ¼ cup of rosemary
- Mint syrup – add 1 cup of mint
- Ginger syrup – add 4 decent chunks of bashed fresh ginger
- ‘Rock the kasbah’ syrup – add 2 star anise, 3 crushed cardamom pods and 1 cinnamon stick
- Lemongrass syrup – bruise the white ends of three lemongrass stalks and add to the sugar and water.
Tabooze Tips
- When flavouring syrup, let it steep for 30 minutes before pouring it into a sterilised glass bottle.
- Make sure your syrup is at room temperature before using it in mocktails.
Hand on Heart Fizz
This is a garden party in a glass. Mix this up head into the yard and wriggle your toes in the grass.

White Sangria
Ingredients
3 medium oranges or 1 cup of orange juice
1 lemon
1 lime
1 bottle of white wine (we use the Santa Digna Sav Blanc) chilled
2/3 cup sugar (I have used less)
2 cups soda water or ginger ale
Method
- Juice the citrus and pour into a jug (or dispenser).
- Pour the white wine into the jug and add the sugar. Stir to dissolve.
- You can store this in the fridge until you are ready to drink.
- Add the soda water or ginger ale just before serving. You can also add some extra citrus wedges to the jug at this stage. Looks great in a dispenser.
- Garnish with dehydrated citrus, rosemary or ginger batons.
Chin, chin!

Cinnamon Syrup
A richer syrup than the simple syrups above. Use this on with the New Fashioned recipe here.
Ingredients
- 1.5 cups sugar
- 1 cup water
- 3 cinnamon quills
Method
- Add sugar and water to a saucepan
- Put on low heat and stir until sugar dissolves
- Add cinnamon quills
- Simmer for about 5 minutes
- Cool before bottling
Tabooze Tips
- Remove the cinnamon quills after 12 hours for a milder flavour.
- Make sure your syrup is at room temperature before using it in mocktails.
The New Fashioned
A smooth, rich & elegantly spicy alcohol free version of an Old Fashioned with a twist. Use the Cinnamon Syrup recipe here instead of the cue of sugar with bitters.
Ingredients
- 60ml Ovant Royal
- 2 tablespoons of cinnamon syrup
- Juice of half an orange
- Dry Giner Ale
- Ice
Method
- Build this co*cktail in a glass of your choice
- Stir everything together
- Add ice
- Garnish with orange peel and a maraschino cherry (if you like them)
Tabooze Tip
- Adjust your quantities of Royal and syrup depending on the size of your glass.
- Play around with proportions until you find the right balance for you. (I have a sweet tooth so add more syrup)
