Aloo methi sabji, a super easy recipe with spices powders to give a unique twist to the simple dish.

You can prepare this for a quick dry sabji for your phulkas, especially in winter when fresh methi is available abundantly.

This is just a simple sabji with methi leaves stir fried along cooked aloo. Being a south Indian, I like to use my sambar powder (which is majorly dhaniya and chilli) for my sabjis as it's very handy.

Instructions

  1. Clean the methi leaves firstly and chop it roughly, keep aside.
  2. After that, wash, peel potatoes, cube cut and boil it until soft but yet retains the shape without over cooking.
  3. Then, heat a kadai and add the tempering items in hot oil, followed by onion.
  4. Fry till onion turns soft and then add the methi leaves. Fry furthermore till it reduces in volume.
  5. Now add chilli & coriander powder (I used my sambar powder in place of these), turmeric, salt and cooked potato.
  6. Then, sprinkle water, mix well and cook covered in low flame.
  7. After that, roast till potato turns golden brown and nice aroma wafts.
  8. Transfer to serving dish and serve as an accompaniment for rice or for rotis! We had with dal, rice and phulka.

Ingredients

  • 3 Potato
  • 1 Onion
  • 1 cup Methi leaves without stem, tightly packed
  • 1 teaspoon Kashmiri chilli powder
  • ½ teaspoon Coriander powder
  • ¼ teaspoon Turmeric powder
  • Salt

To Temper:

  • ½ teaspoon Mustard Rai
  • 1 teaspoon Cumin seeds Jeera
  • 1 tablespoon Oil

Notes

  • Make sure to balance the spice, salt for methi not tasting bitter.
  • Use mustard oil if you like the flavor and for authentic taste.
  • You can keep it simple with just spice like red chilli powder or green chilli and no coriander seeds powder.This way the methi's flavor turns out strong.
  • Cook potatoes just right without turning it mushy.

    Tried your aloo methi today and came out good...But when the potato in my gravy was not as roasted as yours..When the curry started sticking to my pan I drizzled some water and stirred it...I switched off the stove when the gravy used up all water...Should I have used oil during that time???

    Shiny,
    Cook covered for some time(say 5 minutes)in medium flame and after that keep stirring at interval of 2 minutes for 6-8 minutes. Do not keep sprinkling water. Only once when you cover and cook. After that, if u want you can drizzle oil to avoid sticking to pan... hope this helps

    Skip red chilli powder, turmeric and you can add green chillies and cooking cream to make it as gravy
