What is the difference between a Brownie and a Blondie?

They’re very similar in that they both contain flour, eggs, butter or oil, and sugar. However, Blondies are vanilla-based and use brown sugar, whereas Brownies are chocolate-based and use white. They’re both delicious!

I have included step by step photos and instructions, as well as tips and tricks in the post. If you’d rather skip all that, scoot right on down to the recipe card located at the bottom of the post.

You’ll need a large bowl, a 8×8 or 9×13 baking pan (depending on how thick you like your blondies, and a wooden spoon for mixing. No stand mixer or any other special equipment required!

Kylee’s Notes

  • It is ok if the middle is a bit soft as it will firm up as it cools.
  • You may wish to add semi-sweet chocolate chips, white chocolate chips or butterscotch chips to your blondies. I like them plain, but you do you!
  • Chopped nuts are a great addition, try macadamia, walnut or pecan for an epic twist!
  • Lining the baking pan with parchment paper will help you remove the blondies from the pan cleanly.

Recipe Ingredients and Possible Substitutes

The full list of ingredients and quantities is found in the printable recipe card below.

  • Butter. I use unsalted butter in this recipe, but use salted interchangeable with no issues. If you’re worried, just reduce the salt you add, or leave it out altogether.
  • Brown Sugar. Dark brown sugar or light brown sugar works just fine in this recipe.
  • Eggs. I use large ones!
  • Vanilla
  • Flour. Regular, all-purpose flour.
  • Baking Powder
  • Salt. See above.

These were ok! I think a metal pan would’ve served me better than glass. My bars burnt on the outside but weren’t cooked on the inside (brand new oven too). Overall they were decent

I found this recipe looking for something last minute to make for a pot luck. I already had everything needed and they seemed easy and fast. They were amazing! Sort of a butterscotch flavor, chewy, simple without being bland and rich without being too heavy or sweet. Everyone loved them. I’m definitely going to make them again and experiment with some mix ins and substitutions, but they’re also great just as the recipe reads. Definitely use a 9×13 tho. Thankfully that’s all I had and they turned out great.

FAQs

What are blonde brownies made of? ›

Blondies are basically 'blonde brownies.' There is no cocoa or melted chocolate in the batter of a blondie. Instead, blondies are made with brown sugar for a rich butterscotch flavor and plenty of vanilla extract for a wonderful vanilla flavor. A good blondie is gooey, chewy, and a little fudgy.

What's the difference between brownies and blondies? ›

Both have chewy textures. However, blondies have a much lighter and softer taste than brownies. The ingredients used in brownies are where the two recipes diverge the most. Blondies use vanilla extract and brown sugar instead of cocoa powder to get their flavor, while brownies use chocolate and cocoa.

Why are my blondies not gooey? ›

How do I make sure my blondies are gooey in the middle? For gooey blondies, use a recipe with a small amount of flour (like ours), and don't over bake your blondies! The center should still be a little soft when you take them out of the oven. They will continue to set as they cool.

Why are my blondies gooey in the middle? ›

Are blondies meant to be gooey in the middle? Yes, blondies should have a gooey middle and be chewy. Don't overbake them or they will be dry.

What is another name for blonde brownies? ›

Blonde brownie, blondie bar, blondies, butterscotch brownie.

Why are my blonde brownies dry? ›

Do not over-bake the brownies. This recipe shouldn't take longer than 26 minutes to bake so make sure you check on them at 23 minutes. If over-baked, the blondie portion will be dry and crumbly instead of soft and tender.

What is a royal brownie? ›

Royal brownies are sweet and full of cocoa, sugar, and applesauce. These brownies come out smooth and fudgy and you can add walnuts for some additional texture.

What do Scottish brownies look like? ›

How to tell if a blondie is done? ›

How do you know when blondies are done? Watch blondies closely because if you bake them too long they will be dry and not as soft. You can insert a toothpick in the center of the pan to check for doneness. If the toothpick comes out clean, they are done.

Why do my blondies taste like cake? ›

Remember that we're letting them cool in the pan completely, so they will continue to cook out of the oven. Remove them from the oven when moist crumbs are still clinging to a toothpick. Why are my blondies cakey? Cakey blondies can be a result of too much liquid in the batter, over-baking, or under-stirring.

Why do my blonde brownies sink in the middle? ›

Stella Parks has a surprisingly simple solution: Air. Yes, air. Or, lack thereof, rather. Parks swooped in to save the day (and future batches of blondies), acknowledging that while glass pans can make a big difference (requiring up to double the baking time), the biggest issue is usually under-aeration.

Can I put undercooked blondies back in the oven? ›

If your baked goods are undercooked:
  1. If they are only slightly undercooked, you can try returning them to the oven and baking for a few more minutes.
  2. If they are significantly undercooked, you may need to extend the baking time significantly.

What are the three types of brownies? ›

Brownie textures fall into three general camps… Cakey, fudgy and chewy. Cakey brownies, like the name implies, are light, moist and airy, with a slightly fluffy, cake-like interior. Fudgy brownies are moist, dense and gooey, with almost the texture of fudge, but not quite as compact.

Are blondies just cookies? ›

What is a blondie? Besides being one of my favorite desserts, a blondie is a fudgy baked bar reminiscent of a brownie without the chocolate. (You'll often hear them called “blonde brownies” for this reason.) They're crunchy on the outside and gooey on the inside and are better than any cookie, and easier to make too.

Do blondies look raw? ›

If your blondies still seem raw, you may have over mixed the mixture (just like brownies taking longer in some ovens!) – cover in foil, and bake in 5-minute increments.
