I know what it's like to feed a vegan family with big appetites. Sometimes you just need something quick and easy that will satisfy them, and some sort of pasta dish is usually the answer.

I have 2 hungry vegan teenage boys that are racing off to sports in the evenings and I have about 20 minutes to get a satisfying, healthy, dinner on the table, so this is what I make to feed my vegan family.
